Easy Madeleines

Hi guys!

Sundays are for baking is one of my motto’s and today was no exception.

I recently bought a Madeleine baking tin and I just couldn’t wait to try it πŸ˜‰

What we need (12 madeleines):

  • 1 egg
  • 1 egg yolk
  • 50 g unsalted butter
  • 50 g caster sugar
  • 30 g self-raising flour
  • 1,5 tbsp cornstarch
  • Some fine lemon zest
  • Madeleine baking tin

How to:

  1. Preheat the oven at 180Β°C
  2. Grease the baking tin
  3. Melt the butter
  4. Mix together sugar, both eggs and the lemon zest until foamy
  5. Add flour and cornstarch
  6. Mix in the melted butter
  7. Fill the baking tin
  8. Bake for about 10 minutes or golden brown
  9. Let them cool down and serve

These little cakes bring back lots of memories. When I was little, I used to eat these are my grandparents. I have to admit these homemade ones of even storebought ones don’t compare to the ones from Lotus.

Swedish Princess Cake

Hi guys!

This weeks recipe is one with a Royal touch: Swedish Princess Cake. Swedish what? This cake is a traditional Swedish layered cake with yummy sponge cake, pastry cream, lots of whipped cream and a subtle layer of green marzipan.
Finishing touch? A pink marzipan rose.

Homemade Kaiserschmarrn

Hi guys!

Tomorrow is Lichtmis / Candlemas. The typical treat on that day is: Pancakes! I was thinking of many different Pancake recipes but given the time of the year and my love for skiing and Austria, I thought Kaiserschmarrn would be great!

Have you ever had Kaiserschmarrn? It’s a typical Austrian dish which is closely related to Pancakes. You basically make a couple of big, fluffy Pancakes and tear them apart. Add some raisins and apple sauce, some icing sugar and you’re good to go! Super easy and so so good!
