Fiesta Friday #28: Rice Dish with Chicken

Hi guys!

I’m sorry for missing Fiesta Friday last week. I had such a busy day/week/weekend with the surprise party of my mother-in-law.
But now I’m back! And ready to party with Angie, the lovely co-hosts and everyone else!

When I’m home alone and (of course) hungry, I want to cook myself something easy.
So I made this rice dish with chicken, mushrooms and zucchini! It was easy and delicious and therefore perfect to me :D

Rijstschotel

What do we need: (3 persons)

  • 1 zucchini
  • 1 package mushrooms
  • 2 bags of rice
  • 1 package chicken
  •  salt & pepper

How to:

First, wash the mushrooms and the zucchini. Cut them into any kind of pieces you like.
Bake them in a pan. Spice with salt & pepper.
Cook the rice.
When the vegetables are baked, put them in a bowl and bake the chicken in their pan. Spice with salt & pepper.
Grab a large bowl and put everything in it. Mix it a bit together and you’re done!

See, this was easy, wasn’t it :D

I know this ain’t no fancy dinner but does it has to be one? When I’m home alone, all I want is some food I can eat in front of my television or just some hot food in general ;)
And ordering a pizza is so expensive…

I hope you guys enjoy my easy peasy dish!
Have a delicious day and a fabulous Fiesta Friday!

Fiesta Friday #18: Pasta-time!

Hi guys!

I told myself to wait for a later Fiesta Friday because of my finals… But I couldn’t wait! It just seems too much fun!!!

I am SO excited about my first Fiesta Friday! It was the lovely Jhuls from thenotsocreativecook who invited me for this awesome party :D
Thank you so much Jhuls!
And ofcourse thank you so much to everyone who made this party happen!

When I thought about what recipe to share with you, the one thing that popped straight into my head was: PASTA!
But what kind of pasta…
I’ll share my favourite pasta of all times! It’s a pasta with chicken and mushrooms ^^
It even beats my ex all time favourite lasagne!

I have to say, it is my boyfriend (who happens to be a cook) who makes it for me. So it’s actually his recipe :)
But I’ve got the approval to blog about it (isn’t that sweet ;) ).
He thinks of it as ‘just pasta’ but for me, it’s heaven! I have to warn you: you WILL overeat yourself! My boyfriend litteraly has to stop me because I just can’t…

It’s a very easy and customized recipe. So, I’m sorry for all of you who need to know the exact amount of ingredients because I can’t really give you that :s He cooks with his feelings, not with grams.

What do you need for 4 persons:
(Don’t worry, every person gets to take a second round and if you’re lucky, there will be someting left)
– 1000g pasta (any pasta will do, choose your favourite!)
– chicken (we use about 1 portion of chicken from our supermarket)
kip
– mushrooms (we use 1 pack of muchrooms)
– 0.5 l cream (use the culinary cream with about 20 – 30% fat => keeps it healthy ;) )
– herbs: he uses ckicken herbs and parsley (he sometimes adds whatever he feels like…)
– a little bit of salt and pepper
– cornflour

How to:
Cook your pasta while you bake the chicken.
If the chicken is baked, put in the mushrooms.
If that looks good, add the cream. Oh yes, the chicken and mushrooms will be some sort of sauce :)
Don’t forget to add your herbs, salt and pepper.
To thicken the sauce, you might have to add a little bit of cornflour.
When the pasta is done (you can use it if it’s all dente), add it to the sauce. Or add the sauce to the pasta if your pan is too small.
Now mix it all together so the sauce is everywhere :)
Enjoy!

p.s. what I really like about this recipe is the fact that the sauce sticks to the pasta :) So yummy!

I hope you’ll like it as much as I do :D
And remember: Don’t eat it alone! You’ll need someone to stop you.

Have a delicious day! <3
