Christmas Jam Cookies

Hi guys!

Nothing says Christmas more than Christmas Cookies… I’m sorry but you can’t say you’ve celebrated Christmas if you haven’t had any cookies to go with it. You just can’t.

Sooooo I’ve made some yummy Jam Cookies! They can be used for several occasions because they aren’t Christmas exclusive as you can see but these star shaped cookies fit Christmas perfectly as well :)

What we need:

  • 250 g butter
  • 165 g sugar
  • 1 egg yolk
  • 250 g flour
  • pinch of salt
  • raspberry jam (or any kind of jam you like)
  • cookie cutters in 2 sizes
  • plastic foil
  • baking plate
  • baking paper

Christmas Jam Cookies

How to:

  1. Mix together butter and sugar until fluffy.
  2. Add the egg yolk.
  3. Sift the flour and add it together with the salt to the mixture.
  4. Mix until everything gets combined and it forms a real dough.
  5. Wrap the dough in plastic foil and store for 30 – 60 minutes in the fridge.
  6. Remove the foil and roll out the dough.
  7. Cut out as much stars as you can.
  8. Cut out a smaller piece in half of the stars (these will be your top stars).
  9. Heat the oven at 190°C.
  10. Place the cookies on a sheet of baking paper on a baking plate and bake for 15 minutes at 190°C.
  11. Let the cookies cool on the baking plate for a bit until placing them on a rack to cool completely.
  12. Take your ‘full’ stars and put some jam on them.
  13. Sprinkle some powdered sugar on the top stars (the ones with the holes).
  14. Place the top stars on top of the jam.
  15. Serve! :D

November Favorites – Christmas Edition

Hi guys!

It’s December!!! I lost track of how many times I’ve either said or thought that… But I’m just so excited! December really is the most wonderful time to me. Happy times and lovely time with family and friends. It’s such a great time! I don’t even mind the cold. Snuggle together with a fluffy blanket and some tea or hot chocolate and I’ve already forgotten about the crappy wether :)

This months favorites is all about Christmas! Many of you have been preparing for THE holiday of the year (at least it is for me) and I’ve been inspired by so many of your awesome recipes and crafts. My to-do list has grown and I do hope this little list can inspire you as well to create some yummy dishes for your Christmas parties :)

#1: Gingerbread Latte Cupcakes

Oh Annie… These Gingerbread Latte Cupcakes are to die for! So adorable! I absolutely love those cute little Gingerbread Men. Got to find some myself. Yumm!

#2: Christmas Tree Donuts

Jo-Anna from A Pretty Life made this pretty cake. It’s the perfect Christmas cake if you ask me :) I’ve never had it (or I can’t remember if I had) Eggnog but I’ve seen enough Christmas movies to know this is part of the holidays :)

#4: Peppermint White Chocolate Rugelach

#5: Peppermint Mocha Fudge

Yes. Candy cane reminds me of one thing: Christmas! And so does this yummy Peppermint Mocha Fudge from Brandie and her Home Cooking Memories blog. I really like the presentation with the crushed candy cane and it gives me this instant holidays feeling ^^

Marzipan Potatoes

You already know I can’t wait until Christmas is here but there is one thing I absolutely LOVE about this time of the year and St. Nicholas: marzipan! I’m addicted to it and I swear, I could eat a whole package at once!

Sooooo I went looking for a recipe… I wish I hadn’t because it’s way too easy! I thought if it would be very hard to make, I’d certainly never make it again but it’s just sooooo easy! You can barely call it a recipe ;)

It was the lovely Annelies from Een Lepeltje Lekkers who made this last year and it’s so good I didn’t adapt it at all. So thank you Annelies for these yummy Marzipan Potatoes!

What we need:

  • 150 g powder sugar
  • 150 g almond powder
  • 2 tablespoons of crystal sugar
  • 2 tablespoons of cocoa powder
  • 1 egg white

How to:

  1. Mix together the almond powder and the powder sugar.
  2. Add the egg white.
  3. Mix together with a spoon until the mixture begins to stick together.
  4. Blend with your hand(s) until it becomes a ball.
  5. Knead until perfect marzipan starts to form.
  6. Cut the ball in smaller pieces and roll them into little balls.
  7. Put together sugar and cocoa powder in a bowl.
  8. Put the little marzipan balls in the bowl and start rolling them around. Do this one little ball at a time.
  9. Place the Marzipan Potatoes on a plate so your kids, guests, family, … can attack!

Semolina Pudding (Smoelpap)

I have something special for you today. You love it or you hate it. I don’t think there’s something in between.

We call it smoelpap :) My mom used to make this at every birthday party with my dad’s family since we all loved it so much :) The memories came back as soon as I saw the pack of semolina at the store this week.

My mom made this Semolina Pudding with raisins and sometimes added a little booze to it. I remember this one time my mom had added a bit too much, by accident she said ;) I opened the fridge and the smell alone made me drunk! It was unbelievable! But good :)

I didn’t use raisins in my Semolina Pudding. Albert Heijn has given me a package of lovely ingredients and one of them was a bag with cranberries! I immediately knew this was my chance to recreate the one dessert my mom used to make when I was little!

Cranberry Semolina Pudding

What we need:

  • 1 l milk
  • 1 bag vanilla sugar
  • 100 g semolina
  • 75 g white sugar

How to:

  1. Cook the milk
  2. Add the ingredients
  3. Stir whilst the mixture boils for about 5 minutes or until the mixture becomes a thicker pudding
  4. Poor the semolina pudding in a baking tin or pudding mold which has been held under cold water
  5. Leave the pudding to cool in the fridge
  6. Flip over the pudding and you’re ready to dig in!

Nerdy Nummies Chocolate Chip Smart Cookies

If I were a cookie, I’d look a little something like this:

Nerdy Nummies Smart Cookie

This Nerdy Nummies Chocolate Chip Smart Cookie is the cutest cookie I’ve EVER seen!

You know I’m a big fan of Rosanna Pansino and her Nerdy Nummies series on YouTube, right? She introduced me to this cute cookie since it’s the logo of her series :) The minute I saw this Chocolate Chip Cookie, I knew I had to make it! It’s just so cute! And yummie ^^

Rosanna used cookie icing to make the glasses but mine just kept breaking (I’d even made blue glasses because mine is a bit blue :( ) So I turned to my first love, chocolate ;)

Nerdy Nummies Chocolate Chip Cookies!

What we need:

  • 260 g flour
  • 150 g white sugar
  • 150 g brown sugar
  • 1 tsp salt
  • 2 eggs
  • 300 g chocolate chips
  • 240 g butter

Chocolate Chip Cookies

How to:

  1. Combine flour and salt in a separate bowl
  2. Combine butter, both sugars and vanilla extract in your mixer.
  3. Add the eggs
  4. Slowly add the flour once the eggs are completely combined
  5. Fold in the chocolate chips. Make sure to keep a handfull of thema side to decorate our cookies
  6. Bake our cookies for about 15 minutes at 190 degrees centigrade or untill they turn golden brown

Oh, you thught I was the only one in my house who loved Chocolate Chip Cookies so much? We both did. But our little doggie seemed to like them pretty much too ;)

Homemade Chicken Burgers

Hi guys!

Nothing sweet today but still very delicious! And very healthy too in fact :p
These Homemade Chicken Burgers are easy to make and easy to devour :)
p.s. dogs like them too ;)

What we need:

  • 500 g minced chicken
  • onion
  • herbs
  • 1 egg
  • pepper & salt
  • breadcrumbs

How to:

  1. Put the meat in a bowl
  2. Chop the onion and add it to the meat
  3. Add the egg
  4. Add herbs, pepper and salt
  5. Knead with your hands
  6. Add the breadcrumbs and knead again
  7. Roll 4 little balls out of the meat
  8. Bake your Homemade Chicken Burgers

Tadaaaaaaa! Ready for dinner!

August Favorites

Hi guys!

It is official: Summer is over! It’s the 1st of September and all the kiddos had to go to school again. I bet lots of the parents are relieved their kids can go back to school :p There will be kids who loved going back and there will be some who cried…
One thing is for sure: you are going to love these five favourites! ;)

I almost can’t believe Summer is gone already… It’s gone so fast! Tomorrow it’ll be Christmas… Not that I would find that unfortunate ;)

Let’s not think about the time but let’s see what August has given us! I was super happy to see August giving us as much awesome recipes as July had done :)

Panna Cotta? Yumm! White Chocolate Panna Cotta? Awesome! I love Panna Cotta so so much and I love white chocolate a lot too so this dessert from The Flavor Bender is a perfect fit for me!

Peach and Mango, Jhuls? Seriously? Those are my favorite fruits! Looks like this pie is another perfect fit for me ;) I love the way she has turned this pie in cute little packages :) Looks like little gifts to me!

YES! This Duo Cake could not be left out in this yummy list! Mila, girl, you have excellent taste! This is such a cool and delicious dessert and totally something for me :D I mean who could possibly resist the combo of chocolate cake and cheesecake? I don’t!
