Spiderweb Pumpkin Cheesecake for Halloween

Hi guys!

We’ve had Halloween Cupcakes and Cookies. Now it’s time for a Halloween Cheesecake! What seasonal veggie could be better to play the lead in today’s Halloween recipe than pumpkin? None I tell you ๐Ÿ™‚

Pumpkins always remind me of October and of Halloween. Always. So of course one of my Halloween recipes had to feature pumpkins. I mean, come on. Pumpkins are veggies that can’t be ignored or they’ll turn ugly, agressive and mean. Oh wait, that’s my neighbour’s fabulous carved out pumpkin I’m describing… Anyways, it’s pumpkin recipe time today!

Easy Speculoos Cheesecake with Dr. Oetker

Hi guys!

September means “Back To School”. The little ones are probably already looking forward to Christmas and the oldest ones may haven’t yet begun their new school year. But one thing is for sure: everyone is getting busy again. Including mom and dad. Planning after school activities, who’s going to bring them to school? Who picks them up? Are the grandparents available? Can Little Joe bring his friend over after school? …

Raspberry Cheesecake Bites

Hi guys!

Dessert comes in all possible sizes. These Raspberry Cheesecake Bites might be the smallest ones I’ve ever made. But small desserts can be as yummy as large ones. In fact, these little cuties are like a kiss from an angel. Heaven on your tongue. Especially if you cover them in chocolate. Yummmm.

These Raspberry Cheesecake Bites could make the perfect dessert after a BBQ, whereย you’ve possibly ate too much to handle a ‘normal size’ cheesecake ๐Ÿ˜‰

March Favorites

Hi guys!

It’s the first of April. Anyone a good joke? No? Me neither… I can’t tell jokes and I never know a good joke whenever people ask me so I don’t think comedian is my perfect job. Although I do make people laugh with the random answers or remarks I make. Yay ๐Ÿ™‚

But more important than good or bad jokes: the March Favorites!
Oh boy it has been so hard to choose because my fellow blogging friends have been outdoing themselves. Again.

I usually don’t have favorites in this favorite 5 list but this time I secretly do. (It’s number 1 & 2 and you absolutely won’t blame me. Trust me.)

No bake Snickers Cheesecake in a jar

Hi guys!

I’ve seen so many desserts in a jar lately and I absolutely love them! I’ve been dying to try some myself but refused to buy jars in the store because I thought they were too expensive. So for a very long time: no desserts in a jar for me…

But my mom collects the jars from the jam for me. Apparently. Yay me! Now I could finally try some desserts in a jar myself ๐Ÿ˜€

The first attempt was this recipe: Snickers Cheesecake in a jar!

It’s a bit different from the Cheesecakes I’ve made so far. Other ingredients for example. I was very curious how my testing audience (the neighbours) would feel about this recipe. But they liked this little bomb of calories. Oh yes, this really is a little calorie bomb ๐Ÿ™‚

Snickers Cheesecake in a jar recipe

What we need for 2 jars:

  • 2ย jars
  • 120 g cream cheese
  • 180 mlย heavy whipping cream
  • 1/2 tsp vanilla extract
  • 100 gย sugar
  • 150 gย crushed Oreo cookies
  • Snickers, cut in pieces
  • Caramel topping

How to:

  1. Beat together cream cheese, vanilla and sugar until creamy.
  2. Whip the cream in a different bowl.
  3. Fold the whipped cream into the cream cheese mixture.
  4. Put the crushed Oreos on the bottom of the jars and stamp down.
  5. Fill a piping bag with the cheese mixture and cut off the tip.
  6. Fill the jars for 3/4 using the piping bag.
  7. Drizzle some caramel on top.
  8. Finish with the Snickers.

Brownie Caramel Cheesecake

Hi guys!

Oh I now what you’re thinking… ‘Did she really say Brownie Caramel Cheesecake in one sentence?’ Yes, I did! :p

Brownie Caramel Cheesecake - Sarah's Little Kitchen

This is by far the most decadent dessert I’ve ever made…
Although it doesn’t look that decadent ๐Ÿ˜ฆ
My Brownie Caramel Cheesecake looks terrible! I first didn’t want to share it with you guys because this isn’t exactly something you’d call ‘pretty’.
But it is so good I had to share it!
And because I know YOUย will make the perfect Brownie Caramel Cheesecake! ๐Ÿ˜€

What we need:

  • half a batch of Brownies
  • +-300 g caramel
  • 150 g white sugar
  • 3 eggs
  • 2 teaspoons of vanilla extract
  • 500 g cream cheese
  • 1 little bottle of coffee milk (+- 180ml)
  • Chocolate fudge topping

Brownie Caramel Cheesecake, so decadent! - Sarah's Little Kitchen

How to:

  1. Make the brownies. I would suggest making only half a batch because that’ll be enough. Or you can make the whole batch and keep half of it to eat later on ๐Ÿ™‚ If you make the whole batch, bake the other half in another baking tin so you don’t have to cut the brownies before adding the rest of the recipe.
  2. Heat the caramels and coffee milk at medium temperature. Stir frequently until you have a smooth caramel sauce.
  3. Mix together the cream cheese and sugar until well combined.
  4. Add the eggs one at a time whilst beating.
  5. Add the vanilla extract and beat until the batter is beautifully mixted together.
  6. Poor 2/3 of the caramel sauce over the baked brownies.
  7. Put the cream cheese mixture on top.
  8. Bake for 50 minutes at 180 degrees centigrade.
  9. Let the Brownie Caramel Cheesecake cool.
  10. Dress with chocolate fudge topping and the rest of the caramel sauce.

Brownie Caramel Cheesecake. Such a decadent dessert! Unfortunately mine doesn't look that fabulous but it does taste great! - Sarah's Little Kitchen

I hope you like my little monster here :p Oh well, taste is more important, right?

Fiesta Friday #23: Raspberry Cheesecake

Hi guys!

I LOVE raspberries! Don’t you?

I was looking for the perfect Summer dessert besides ice cream and I have found it!
Really, this Rapsberry Cheesecake is SOOOOOOOOOOOOOO delicious!
No, I’m NOT exagerating! AT. ALL.

Raspberry cheesecake 3

If there was one recipe you would try from my blog, try this! Please!
You won’t regret, I promise.
I was never a fan of cheese or cheesecakes but this…
I think I could easily eat the whole cheesecake by myself!
Thank God there isn’t too much sugar in it…

The first time I ate this DELICIOUS cheesecake was at my boyfriend’s house. His mom made this.
Oh it was so, SO good!
I then decided to make one myself!
One year later, it happened!
I must say, if I had known that my cheesecake would turn out to be so good, I wouldn’t have waited a year to make it!
I guess I was afraid that my cheesecake wouldn’t be as good as hers… (his mom is such a great cook!)

My parents love this cheesecake. My dad doesn’t really like cheesecakes but this one, he thinks is a “toppertje” ๐Ÿ˜€ (= a great one!)
Even the neighbours loved it!
I often give them some of my desserts because I always have so much left…
We’re only three (or four if my boyfriend is here)…

Now, let me introduce you to the amazing Raspberry Cheesecake!
I thought it would be the perfect treat for Fiesta Friday ๐Ÿ˜€
Thank you Angie at The Novice Gardener for this awesome party and of course also a big thank you for the co-hosts!
Let’s party!

What do we need:

  • 160g Biscoff (speculoos)
  • 160g butter
  • 500g raspberries (I used frozen ones and fresh ones to decorate)
  • 1 lemon
  • 350g cream cheese
  • 200ml cream (to whip)
  • 6 sheets of gelatine
  • 100g sugar
  • 1 bag of vanilla sugar (+- 8g)
  • spring cake tin

How to:

I put a sheet of baking paper (cut out in a circle) on the bottom of the spring cake tin.
Melt the butter. Crunch the Biscoff. Blend these two with your hands. Fill the bottom of the spring cake tin with this mixture.
Make sure it is spread equaly.
Mix the cream cheese together with the sugar and the vanilla sugar until it is nice and smooth.
Soak the sheets of gelatine in cold water. Squeeze the lemon and heat the juice a little.
Squeeze the sheets of gelatine and add them to the lemon juice. Stir until the gelatine is completely absorbed.
(This may take a while. If it is not hot enough, put it in the microwave for about 30 seconds.)Add it to the miture of cream cheese and blend well.
Whip the cream and blend it with the cream cheese mixture.

Put some raspberries on the cookie crust.
Put the cheesebatter on top of it.
Decorate with the fresh raspberries and leave it to chill in the fridge for about 2 hours.

I was wondering the other day why Fiesta Friday lasts until Wednesday…
That means we only get one day to recover from our MAJOR hangover!
Perhaps because Fiesta Friday is all about enjoying and sharing and that should be happening every single day!
The one non-Fiesta Friday-day is probably a day to make Fiesta Friday an actual party…
Because it wouldn’t be a party if it happened every day, right?

If you have any idea or thoughts on this question, please share it with me! I’d love to hear your opinion!
Happy Fiesta Friday!
Don’t forget to take a glass of bubbles!

Have a delicious day โค
