Fiesta Friday #26: Banoffee Pie

HERE.IT.IS!
The famous – and oh so caloribombing – Banoffee Pie!
I promised you in my post about Lojola that I would bring an English version of the recipe…
So I did 🙂 And I’m bringing it to this weeks Fiesta Friday!

It is creamy, it is banana, it is delicious!
If you have to go caloribombing, this is the way you should do it!

Let’s get this party started! Grab some Banoffee Pie ’till you can’t stand… 😉

What do we need:

  • 200g speculoos
  • 125g butter
  • 4 bananas
  • 700ml cream (>= 40% fat)
  • 1 spoon powder sugar
  • caramel
  • cocoa powder
  • baking tin (spring)

How to:

Preheat the oven at 180 degrees centigrade.
Crush the speculoos and melt the butter. Mix them together.
Put the mixture on the bottom of the baking tin and make sure to push it to the bottom.
Bake it for 15 minutes. Let it cool a bit and put in the fridge for about an hour.

Heat the caramel and put it on top of the speculoos crust.
Cut the bananas in slices (+- 1cm wide) and lay them on the caramel.

Whip up the cream witht he powder sugar.Add the whipped cream on top of the pie and put it in the fridge for 2 hours.

Sprinkle some cocoa powder on top of the Banoffee Pie before serving and… BON APETIT!

I think this song describes this pie just fine 😉
Oh well, maybe just the “I’m so fancy” part.
But who knows, if you add some alcohol to this pie you might be able to get drunk on the minibar…

p.s. Make sure you don’t overeat yourself… I don’t know any CPR…

  3. I’ve never had it but I remember Kiera Knightly’s character in Love Actually trying to bribe her husband’s friend with one of those in order to get her hands on the wedding video he shot 🙂 I bet yours is far more scrumptious!
