Vanilla Easter Bunny Cake with Mango

Hi guys!

Easter is almost here! Are you guys as excited about it as I am? I don’t really decorate the house but I do love the Easter chocolate ๐Ÿ˜‰ I think I’m going to make my boyfriend a little easter hunt. I think he’ll love it.

When I think about Easter, I think about chocolate, eggs, little chicks and bunnies. I somehow always go for the bunnies when it comes to Easter recipes. Last year,ย  I made a big bunny cake. This year? I’m making one again! But a completely different bunny cake.

Vanilla Easter Bunny Cake

My main inspiration came from Lyndsey. She has a fabulous Instagram account by the name cococakeland. Go check her out, she makes awesome cakes! I saw her bunny cake and fell in love with it. I had to try this myself. Remember, If I can do it, you can do it too! So don’t be scared. You got this ๐Ÿ˜‰

What we need:

Cake

  • 500 g unsalted butter at room temperature
  • 430 g caster sugar
  • 3 tsp vanilla
  • 6 eggs
  • 375 g self raising flour
  • 175 ml milk
  • 175 ml sour cream
  • 18 cm cake tin

Buttercream

  • 750 g soft, unsalted butter
  • 600 g icing sugar
  • 4 tbs lemon juice
  • 3 tbs milk
  • pink, green, red and blue food colouring (makes pink, green and purple buttercream)

Mango curd

  • 6 eggs
  • 500 g caster sugar
  • 4 tbs cornflour
  • 280 g unsalted butter
  • 400 g mango puree

Decorations

  • piping bags
  • different piping tips including 1 for leafs, 1 for roses or a russian piping tip
  • mini easter eggs
  • black, white and pink fondant
  • yellow food colouring to make the ears slightly yellow

Easter Bunny Vanilla Cake

How to:

Cake

  1. Preheat the oven at 180ยบC
  2. Grease your cake tin
  3. Beat butter, sugar and vanilla until light and fluffy
  4. Add the eggs one at a time beating well after each addition
  5. Stir in flour and milk, alternately, in two batches
  6. Stir in sour cream
  7. Fill the cake tin for 3/4th. You may have to use 2 tins or bake in two times
  8. Bake for about 45 minutes
  9. You can start your decorations whilst the cake bakes

Buttercream

  1. Beat the butter until soft and fluffy
  2. Add half of the icing sugar with 2 tbsp milk
  3. Mix well
  4. Add the other half and 1 tbsp milk
  5. Mix untill all is combined
  6. Add the lemon juice and mix again
  7. Take 2 small bowls and make a small amount of pink, green and purple buttercream

Mango curd

  1. Whisk eggs, sugar and cornflour in a medium saucepan, off the heat, until smooth. Add butter and mango puree.
  2. Stir over low heat for 10-20 minutes or until the mixture is thick enough to coat the back of a spoon.
  3. Strain into a bowl, then cover with plastic wrap
  4. Let it cool completely

Assembly

  1. Take a cardboard and put a little dot of buttercream on it so the cake will stick
  2. Place 1 layer of your cake on the cardboard
  3. Pipe a circle of buttercream on the edge of the cake
  4. Fill the rest with mango curd
  5. Place a second layer and repeat the proces until the last layer is placed
  6. Put buttercream all over the cake and smooth it out
  7. Take your little decorations and place them where you want them to be
  8. Place the ears
  9. Pipe roses, leafs and other buttercream decorations on the head of the bunny
  10. Finish with some easter eggs
