Homemade Speculoos Ice Cream with Mamita’s Bakeries

I promised you another Ice Cream recipe and I actually think this one is even better than the Stracciatella Ice Cream recipe 😮 (almost can’t believe I’m writing this).

What makes this Speculoos Ice Cream so good? The speculoos! I had the chance to try Mamita’s Bakeries’ speculoos and it is just so good! I’ve always been a fan of speculoos, but I never liked the super spiced ones. You know, so full of spices it becomes a different kind of cookie. At least, that’s what I think. Mamita’s Bakeries has a more spiced speculoos than the famous one we probably all know and I don’t need to mention. But the good thing – no great thing even! – is that this speculoos is just perfect. I mean it! It has that yummy crunch and a more profound speculoos taste, without it becoming something different. I guess you’ll just have to taste one to understand what I’m trying to say here.

I’ll tell you all about Mamita’s Bakeries in a second but first: Ice Cream Time!

What do we need for +- 1L Speculoos Ice Cream:

  • 1 can sweetened condensed milk (+- 305 ml)
  • 500 ml heavy cream
  • 2 tablespoons of Mamita’s Bakeries Speculoos spread
  • Crumbled Mamita’s Bakeries Speculoos
  • pinch of salt
  • Large plate or ice cream box
  • Cups to serve the ice cream in
  • Ice cream scoop
  • Foil

How to:

  1. Put the condensed milk, salt and the speculoos spread in a bowl and mix together.
  2. Whip up the cream and add it in 3 times to the bowl.
  3. Add the speculoos crumbs and blend it all together.
  4. Poor the mixture in a plate or ice cream box.
  5. Put a piece of foil on top and gently press it down.
  6. Leave in the freezer for 1 night.
  7. Enjoy!

p.s. It may take a bit longer to become scoopable (can you say that?) because of the spread inside the ice cream.
