Homemade Kaiserschmarrn

Tomorrow is Lichtmis / Candlemas. The typical treat on that day is: Pancakes! I was thinking of many different Pancake recipes but given the time of the year and my love for skiing and Austria, I thought Kaiserschmarrn would be great!

Have you ever had Kaiserschmarrn? It’s a typical Austrian dish which is closely related to Pancakes. You basically make a couple of big, fluffy Pancakes and tear them apart. Add some raisins and apple sauce, some icing sugar and you’re good to go! Super easy and so so good!

Kaiserschmarrn recipe

This is my absolute favorite meal when on holiday in Austria. We usually go to a cosy chalet somewhere alongside the skiing route and enjoy this awesome dish.

We aren’t able to go skiing this year so my Dad was super happy with my homemade Kaiserschmarrn to recreate the feeling of our otherwise annual winter holiday.

What we need for 4 servings (as a treat. If you want to eat is as a meal, take this amount for 2):

  • 3 eggs
  • 25 g sugar
  • 1 bag vanilla sugar
  • pinch of salt
  • 125 g flour
  • 300 ml milk
  • 50 g icing sugar
  • raisins
  • apple sauce
  • butter for baking
  • pancake pan
  • 2 forks
  • large bowl

Homemade Kaiserschmarrn

How to:

  1. Split the eggs
  2. Mix together egg yolks, sugar, vanilla sugar and salt
  3. Add the flour and milk and gently fold together
  4. Whip up the egg whites and add to the batter. Again, fold in gently
  5. Heat your pan and bake 4 large, thick pancakes
  6. Tear them apart using 2 forks so the pieces are quite irregular
  7. Add apple sauce and sprinkle some raisins on top.
  8. Finish with icing sugar
  9. Enjoy!
