Champagne Cupcakes for New Year’s Eve

Hi guys!

2016 is almost over. I’ve had a great year with you guys. Lots of sweet and funny comments, fun moments at our link parties and I’ve been to some awesome events. 2016 was the year I started working with Dr.Oetker and that’s pretty awesome too πŸ˜€ I loved sharing my recipes with you andΒ my thoughts. I hope I can share yummy desserts with you next year πŸ™‚

2016 goes out with a bang: Champagne Cupcakes! Perfect for celebrations and what celebration is the new year, right. You can use prosecco, cava, champagne or any other bubbly drink for these festive cupcakes. Yes, non alcoholic bubbly drinks are allowed too.

What we need for 12 mini cupcakes:

Cupcakes

  • 125 g butter
  • 125 g caster sugar
  • 125 g self-raising flour
  • 2 eggs
  • 3 tbsp champagne
  • 12 silver cupcake wrappers

Champagne frosting

  • 125 g butter
  • 250 g powdered sugar
  • 3 tbsp champagne

Decoration

  • white fondant
  • small round cookie cutter
  • black (or silver or gold) edible pencil
  • golden or silver sprinkles
  • gold or silver dust (optional)
  • piping bag
  • piping tip

How to:

Cupcakes

  1. Preheat the oven at 180Β°C
  2. Mix together butter and sugar until combined
  3. Add the eggs
  4. Add the flour and mix well
  5. Add the champagne and give the batter a last mix
  6. Fill the cupcake wrappers for 3/4th
  7. Bake for 15 minutes
  8. Let them cool completely before frosting them

If you think the champagne in the cupcakes is a little much, feel free to leave it out πŸ™‚

Champagne frosting

  1. Mix together butter and 1/2 of the powdered sugar
  2. Add the other half and mix until fully combined
  3. Add the champagne and mix at low speed
  4. Put the piping tip in the bag and fill it
  5. Pipe the frosting on the cupcakes
  6. Decorate!

Decoration

I cut out circles of fondant and used gold and silver dust on some of them. I used a black edible pencil to write ‘happy new year’ and ‘2017’ on the circles. Let the fondant circles harden before writing on them. That makes it easier to write πŸ™‚ I placed the circles on the cupcakes and sprinkled some golden stars on the others.
