Halloween Cinnamon Spider Web Cupcakes

Hi guys!

Halloween is coming and that calls for some Spider Web Cupcakes! I’ve seen some amazing Halloween recipes in the last few weeks and I realized I couldn’t wait much longer to come up with some Halloween recipes myself :)

Although we don’t celebrate Halloween that much, we did get some Halloween spirits yesterday with our little Halloween pumpkin light… It almost turned out in a burning table so I don’t think I’ll light that thing again xD

What didn’t get burned were these yummy Halloween Cinnamon Spider Cupcakes! :D

Halloween Spider Web Cupcakes

What we need:

  • 220 g sugar
  • 220 g butter
  • 220 g self-raising flour
  • 4 eggs
  • Cinnamon
  • 250 g mascarpone or cream cheese
  • 250 ml whipping cream
  • Powder sugar
  • 1/2 tablet chocolate
  • Halloween Cupcake wrappers
  • Baking tin
  • piping bag
  • piping tip

Halloween Spider Web Cupcake Recipe

How to:

  1. Mix together butter and sugar
  2. Add the eggs and mix until the batter is smooth
  3. Sift the flour and blend well
  4. Add as much cinnamon as you like
  5. Fill the cupcake wrappers for 3/4
  6. Bake the cupcakes for about 25 minutes at 180°C
  7. Let the cupcakes cool completely before topping them with our frosting

Halloween Cinnamon Spider Web Cupcake Recipe

Let’s make the frosting while our cupcakes cool:

  1. Whip the cream
  2. Add mascarpone and the amount of powder sugar you want
  3. Add cinnamon and mix it all together
  4. Put the frosting in a piping bag with a tip of your choice. I used tip #31
  5. Pipe the frosting on the cupcakes

Time for our spider webs!

  1. Melt the chocolate and put it in a piping bag.
  2. Cut just a little piece off.
  3. Make spider webs on a sheet of baking paper. I made circles with a glass and a pencil to get +- the same size of spider webs.
  4. Let the chocolate webs cool in the fridge. Don’t take them out before they are completely hard!
  5. Place the spider webs on your cupcakes

Christmas Tree Cupcakes with Fluffy Cinnamon Frosting

What a mouth full, isn’t it? :p
The full title actually is: Vanilla Christmas Tree Cupcakes with fluffy Cinnamon Cream Cheese Frosting.
Try saying that five times in a row!

I know Christmas is already behind us, sadly. But I still wanted to share my Christmas Trees with you!
This frosting is the fluffiest, most delicious and subtle frosting I’ve ever had or made!
It’s got this subtle taste of cinnamon in it which makes it perfect for all ages! And even for people who aren’t such Cinnamon fans ;)

Pumpkin Cupcakes with Cinnamon Cream Cheese Frosting

Hi guys! We hate to admit it, but Fall is one of our favourite seasons. The leaves are changing colours, it’s getting colder and we sit under blankets with some coffee or tea… What could be better than a Pumpkin Cupcake with Cinnamon Cream Cheese Frosting to go with it? I’ll tell you: NOTHING! I always thought I’d be a Winter person. Guess I’m more of a Fall person after all… I love the colours, the smell of the cold, not worrying about the snow yet and the cozy blankets in the sofa… A good hot tea and a cupcake, perfect! My scarf already around my neck and gloves in my purse. Some warmer socks and I’m good to go! Don’t forget the heavenly flavours this season brings us! Pumpkin, apples, cinnamon, … Oh and that wonderful holiday: Halloween! Do you love Fall as much as I do? As you might have guessed by now, I am bringing you Pumkin Cupcakes with (Yes, indeed!) Cinnamon Cream Cheese Frosting. I made these as an assignment for a competition. I’m competing to become Foodblogger 2015 for Libelle (That Belgian magazine I once told you about) My first challenge is ‘pumpkins’. You all now I’m a real sweet tooth so what else could I make than cupcakes, right? :p pkc2 What do we need (12 cupcakes):

  • 195 g self-raising flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 120 g butter
  • 100 g granulated sugar
  • 180 g light brown sugar
  • 2 eggs
  • 50 ml milk
  • 100 g pumpkin puree (boil 160 g of pumpkin and then mash it.)
  • cupcake liners
  • cupcake baking tin
  • ice cream spoon

pkc10 What do we need for the frosting:

  • 200 ml cream (>40% fat)
  • 250 g cream cheese
  • 65 g confectioner’s sugar
  • 1 teaspoon vanilla-extract
  • 1,5 teaspoons cinnamon
  • piping bag
  • a nozzle

How to: 1. Preheat the oven at 180°C. 2. Boil the pumpkin. Mash it. 3. Put the dry ingredients in a bowl. 4. Mix the butter and the sugar (2) together.5. Add the eggs, on at a time, while the mixer is still running. 6. Add the dry ingredients and the milk. Mix it all together until the batter is smooth. 7. Poor in the pumpkin puree. 8. Fill the cupcake liners 3/4 full with batter. 9. Bake for 25 minutes. 10. Check wit a toothpeck. If it comes out clean, the cupcakes are ready! Let’s make the frosting: 1. Whip up the cream. Put it in a bowl. 2. Mix the cream cheese together with the confectioner’s sugar, vanilla-extract and the cinnamon. 3. Add the whipped cream and gently mix it together until it’s well combined. 4. Fill the piping bag and decorate! pkc8

Fiesta Friday #35: Apple & Cinnamon Muffins

Hi guys!

It’s party time!
What better to celebrate it with than with these Apple & Cinnamon Muffins?!
What I really like about these Muffins? The fact that your kitchen smells great, the whole time! (due to the cinnamon, of course)
My Dad even thought I had already baked the Muffins when he entered the kitchen. “No Dad, I’m sorry. It’s just the cinnamon…”

My Muffins aren’t exactly how I had hoped them to be. At our Bakery Store they have these “real” Muffins. You know, they’re big and fluffy… Mine aren’t big and fluffy at all. My (delicious) Muffins are small and not that fluffy. But I’m not complaining. I’ve had worse, believe me :p
My friends and parents all loved these little Muffins! And isn’t that the most important? That’s why I bake. To make people happy with my food!

So, are you guys ready to get happy? ;)

What do we need:

  • 375 g self-raising flour
  • 125 g brown sugar
  • 1 teaspoon cinnamon
  • 2 eggs
  • 160 g melted butter
  • 2,5 dl milk
  • 3 apples
  • baking tin
  • large bowl

For the crumble layer:

  • 50 g flour
  • 30 g butter
  • 2 spoons brown sugar

How to:

Sift the self-raising flour and put it in a large bowl. Add the brown sugar and the cinnamon. Blend it together.
Make a little hole in the middle. Mix the eggs together with the milk.
Add this mixture, together with the melted butter, to the flour. (poor it in the hole)
Stir with a wooden spoon.
Peel the apples and cut them in little pieces. Add the pieces to the dough.
Let’s make the crumble: Put the flour, butter and sugar in a bowl and knead until it’s crumbly.
Put the dough in your baking tin and add a little bit of the crumble on top.
Bake the muffins for 25 minutes at 210 degrees centigrade.
Done? Check with a sharp knife and let them cool.
