Chocolate Speculoos Truffles

Hi guys!

I hope you had a wonderful Christmas.

You probably have 1 more big feast to go: New Year’s Eve!
What better treat to serve your guests than homemade Chocolate Speculoos Truffles? πŸ˜€

Some only use Nutella or any other hazelnut based paste to fill the Truffles, but I like it a bit crunchy so I added crunchy speculoos paste as well πŸ™‚ It gives your Truffles a little extra πŸ˜‰ Yummmmm!

What we need for +- 40 truffles:

  • 500 g milk chocolate
  • 200 g milk chocolate shavings (I shaved it myself but you can use prepared ones from the store)
  • 50 g crunchy Biscoff paste / speculoos paste
  • 25 g Nutella
  • 50 g powdered sugar
  • 125 g salted butter
  • piping bag
  • baking sheet lined with parshment paper

How to:

  1. Melt 200 g milkchocolate
  2. Beat the butter soft
  3. Add powdered sugar, Nutella and BiscoffΒ paste and mix well
  4. Add the melted chocolate and mix until fully combined
  5. Fill the piping bag, snip off the tip and pipe long lines of ganache on the parshment paper
  6. Leave in the fridge for at least 1 hour
  7. Melt the other chocolate
  8. Cut the ganache in pieces of +- 3 cm
  9. Dip the ganache in the chocolate, shake off the excess chocolate and roll it through the chocolate shavings
  10. Put the truffles in a bowl and leave for at least half an hour in the fridge before serving
