I have been busy in the kitchen and I know I promised you the good old caloribombing but this delicious Coconut Flan isn’t that bad for your figure! Oh well, it can’t always be delicious AND caloribombing, right? 😉
So, Coconut Flan…
My mom wanted to try out our Moulinex Companion and I let her pick the dishes. Since we still have so much (really, so much!) dried coconut in our kitchen, she decided on this lovely recipe.
I thought flan would be very much ‘caloribombing’ but it’s not!
We had to use concentrated milk without sugar but our store only had the ones with sugar so we left out the additional sugar from the recipe 😉
(See, my mom tries to keep it healthy)
What do we need (+- 6 servings):
- 80 g grated coconut
- 250 g concentrated milk
- 250 ml milk (half cream)
- 2 eggs
How to:
Preheat the oven at 180°C.
Put all ingredients in the Moulinex or in your regular kitchen robot.
Use the knife to knead/chop. Mix for 1 minute at speed 11.
If you’re not happy with the batter, mix again for 30 seconds.
Put the mixture in little bowls and bake it in the oven for 30 minutes.
You can eat it half warm or cold.
Enjoy!

Hmm, I am doing great, Sarah. I am just feeling a little weird… like I am not myself because of the reason that I don’t eat much. No, it’s not intentionally – I feel full with just small servings.

Mmm a great use of the coconut Sarah, your flan is beautiful! I always thought it would be a lot worse for you too, but looking at that ingredient list I guess it’s not too bad after all haha!
Either way, it looks yummy and that’s the important part!
