Happy Valentine’s Day! ❤
“What should I make for Valentine’s Day?” I think that question went through my mind multiple times a day for the past weeks. Red things? Pink things? Red Velvet things? Heart shaped things? I had no idea! Inspiration enough but just no clue. I wanted something easy but delicious. Romantic, but not too much. And – of course – a crowd pleaser. PING! What do I love most? What do women love most? (Besides puppies and men with sixpacks…) Chocolate! Suddenly the idea for my Valentine’s Day recipe was born: Moelleux (aka Lava Cake)

What we need for +- 10 hearts (small servings):
Moelleux:
- 100 g dark chocolate
- 110 g butter
- 4 eggs
- 100 g sugar
- 50 g sifted flour
- pinch of salt
- heart shaped silicone molds
- piping bag
- Vanilla ice cream
Raspberry Coulis
- 250 g frozen raspberries
- 50 g sugar
- saucepan

How to:
Moelleux
- Melt the butter and the chocolate
- Mix together sugar, 2 eggs and 2 egg yolks untill fully combined
- Sift the flour and mix until the batter is smooth
- Add the melted butter-chocolate mixture and a pinch of salt
- Poor the batter in a piping bag and set aside in the fridge for about 2 hours. This will make our batter easier to handle when piping in the molds
- Preheat the oven at 200°C
- Fill the molds for 2/3th
- Bake for 8, max 9 minutes
- Dress your plate with raspberry coulis and a scoop of vanilla ice cream
Raspberry Coulis
- Put the frozen raspberries and the sugar in a saucepan on medium high.
- Once heated, let it sit for about 10 minutes.
- Sift the coulis before using so you don’t have too many seeds
