Hi guys!
I’m sharing a fantastic dessert from The Boyfriend today. On Wednesday, I tried to make a Chocolate Mousse Cheesecake. I failed. Massively. The Boyfriend felt so bad for me, he made this divine Chocolate Cheesecake! That’s what I call true love. Especially because The Boyfriend has nothing with desserts. He did it just for me ❤

I always say chocolate is the answer for anything and I stick with it. I did feel bad about my failed cheesecake, but when I came home to this delicious surprise, I felt happy again. But most of all because it was such a sweet gesture.
What we need:
Crust
- 150 g Oreo
- 150 g speculoos / Biscoff
- 80 g melted butter
Filling
- 220 g melted dark chocolate
- 250 g cream cheese
- 200 g sugar
- 4 eggs
- 25 g cocoa powder
Ganache
- 350 ml heavy cream
- 400 g dark chocolate
Note: best use a spring form for cheesecakes.

How to:
Crust
- Crush both Oreo’s and speculoos
- Mix together with the melted butter
- Spread evenly on the bottom of the cake pan and push down
- Set aside in the fridge
Filling
- Preheat the oven at 180°C
- Mix together cream cheese, sugar and cocoa powder
- Beat the eggs in a separate bowl
- Add the eggs to the mixture
- Add the melted chocolate and mix well
- Poor the batter on top of the crust
- Tap a few times on the counter to clear out any air
- Bake for 40 minutes
- Leave the cheesecake to cool down a bit
- Set aside in the fridge to cool completely
Ganache
- Heat the heavy cream
- Cut the chooclate in pieces or use chocolate chips
- Poor the heated cream over the chocolate and let it sit for about 2 minutes
- Stir the mixture until you get a smooth ganache
- Poor over the cheesecake
- Serve!
