Banoffee Cupcakes

Hi guys!

I have to admit something. I LOVE Banoffee. I’ve been dreaming of Banoffee things for a while. Did you guys see my Banoffee Pie back in 2014? Oh my, is it that old already?! I really didn’t think my dearest Banoffee and I were separated for that long… Good thing I made you something new today!

Today I’m sharing a yummy Banoffee something something with you: Banoffee Cupcakes! Careful, it’s about to get sticky over here… And crazy delicious πŸ˜‰

Banoffee Cupcakes Recipe

These Banoffee Cupcakes are so good, it’s like mini Banoffee Pies. Really.

What we need for +- 18 Cupcakes:

Cupcakes

  • 250 g soft, unsalted butter
  • 250 g caster sugar
  • 4 eggs
  • 250 g self-raising flour
  • 2 mashed banana’s
  • cupcake wrappers
  • cupcake baking tin
  • apple corer
  • ice cream scoop
  • caramel

Frosting

  • 500 ml cream
  • 500 g mascarpone
  • icing sugar
  • 1 tsp vanilla extract
  • 2 banana’s
  • piping bag
  • 8B piping tip
  • spatula
  • caramel

Banoffee Cupcakes

How to:

Cupcakes

  1. Preheat the oven at 180Β°C
  2. Mix together butter and sugar
  3. Add the eggs
  4. Add the flour and blend well
  5. Add the mashed banana’s and give it a good mix
  6. Scoop the batter in the cupcake wrappers for 3/4th
  7. Bake for about 25 minutes

Frosting

  1. Make sure the Cupcakes are completely cool before making the frosting
  2. Mix together vanilla and mascarpone in a bowl
  3. Whip the cream, but not too stiff
  4. Add the mascarpone mixture in a couple of times to the whipped cream and mix in between
  5. Put the piping tip in the piping bag and fill for 3/4th with frosting
  6. Use your apple corer to make holes in the cupcake
  7. Fill the holes with caramel sauce
  8. Pipe beautiful swirls on top of the Cupcakes
  9. Drizzle some caramel sauce over the Cupcakes
  10. Add 1 slice of banana on top
