Chocolate Cheesecake

Hi guys!

I’m sharing a fantastic dessert from The Boyfriend today. On Wednesday, I tried to make a Chocolate Mousse Cheesecake. I failed. Massively. The Boyfriend felt so bad for me, he made this divine Chocolate Cheesecake! That’s what I call true love. Especially because The Boyfriend has nothing with desserts. He did it just for me ❤

Chocolate Cheesecake

I always say chocolate is the answer for anything and I stick with it. I did feel bad about my failed cheesecake, but when I came home to this delicious surprise, I felt happy again. But most of all because it was such a sweet gesture.

What we need:

Crust

  • 150 g Oreo
  • 150 g speculoos / Biscoff
  • 80 g melted butter

Filling

  • 220 g melted dark chocolate
  • 250 g cream cheese
  • 200 g sugar
  • 4 eggs
  • 25 g cocoa powder

Ganache

  • 350 ml heavy cream
  • 400 g dark chocolate

Note: best use a spring form for cheesecakes.

Easy Chocolate Cheesecake

How to:

Crust

  1. Crush both Oreo’s and speculoos
  2. Mix together with the melted butter
  3. Spread evenly on the bottom of the cake pan and push down
  4. Set aside in the fridge

Filling

  1. Preheat the oven at 180°C
  2. Mix together cream cheese, sugar and cocoa powder
  3. Beat the eggs in a separate bowl
  4. Add the eggs to the mixture
  5. Add the melted chocolate and mix well
  6. Poor the batter on top of the crust
  7. Tap a few times on the counter to clear out any air
  8. Bake for 40 minutes
  9. Leave the cheesecake to cool down a bit
  10. Set aside in the fridge to cool completely

Ganache

  1. Heat the heavy cream
  2. Cut the chooclate in pieces or use chocolate chips
  3. Poor the heated cream over the chocolate and let it sit for about 2 minutes
  4. Stir the mixture until you get a smooth ganache
  5. Poor over the cheesecake
  6. Serve!

    1. In Belgium we call it Speculoos (I think we invented it :p) and in the UK they call it Biscoff. I can’t really describe what it is exactly but you can use an all oreo crust or substitute the whole thing with graham crackers that are regularly used for cheesecake crusts 🙂 I hope that helped. Super glad you like it although you don’t do desserts 🙂
