It’s official! Summer is here πŸ˜€ We’ve been waiting for her ever since Winter left the country (did she?) and now she’s here to stay. She has been paying us surprise visits on the weekends but I hope she has a lot planned for us this year.

To celebrate Summer, I have three fantastic No Bake Cheesecake Recipes for you that are super easy to make, perfect on a hot Summer’s day and everyone will love at least one of them. I for one like them all. Of course…

#1: Oreo Cheesecake


Tell me, who doesn’t like Oreo’s? I’ve never met anyone, besides the boyfriend, who doesn’t. Even my parents like them. We discovered this cookie on our trip to New York when I was 18. We bought the originals but also the ones from Wholefoods. I still regret not taking home loads of those cookies back then. I’ve been looking for supermarket versions in Belgium as good as the ones from Wholefoods but I haven’t found them yet. I did find many versions of the black and white cookie but none as good as those I ate in New York. *her mind wanders off*
This No Bake Oreo Cheesecake is the perfect combo between cheese and cookies. Not too sweet and thus perfect for a Summer’s night with friends and family at the first BBQ of the season πŸ˜‰

Oh djeez, these Cheesecakes make me lose my mind… I never thought I’d like cheese but you can wake me for a no bake cheesecake any time! This version with a raspberry crust and fresh raspberries is so good. I could at it every day. Not kidding. This baby never gets old and she can please any crowd πŸ˜‰

#3: Mango Cheesecake

Want to please your crowd with something a little bit more exotic and special? This is the Cheesecake you need! She won’t dissapoint and even the toughest nuts to crack will love this Mango Cheesecake. I promise πŸ™‚ This recipe might take a bit more time than the other two but it is so worth it.
