Halloween is coming up and this year, I didn’t want to be late with my Halloween preppings. So starting with this recipe today, I think I’m right on schedule๐
As always, Pinterest is my favorite playground when it comes to finding inspiration for holidays. Halloween is no exeption. I found the cutest Frankenstein Cupcakes ever! And so I decided to try them. How do you like my little Frankenstein?

Some like it scary, some like it cute. I prefer the latter. My carved out pumpkins never scared anyone, I don’t have spiders or witches. I just bake Halloween treats xD
What do we need (12 cupcakes):
Cupcakes
- 250 g sugar
- 250 g butter
- 4 eggs
- 250 g self-raising flour
- 1 tsp cinnamon
- (optional) Black or Halloween cupcake wrappers
- Cupcake tin
- 1 apple, cut in small pieces
- some extra sugar
Frosting
- 200 ml cream
- 250 g mascarpone
- +- 60 g icing sugar
- green food colouring gel/paste
- 2 piping bags
- round piping tip
- 24 brown m&m’s
- melted white chocolate
- chocolate strands

How to:
Cupcakes
- Preheat the oven at 180ยฐC
- Mix together butter and sugar
- Add the eggs and mix well
- Sift the flour and blend it all together
- Line the cupcake tin with wrappers and fill them 3/4th
- Bake for about 24 minutes
- Put your apple on the stove. Add some sugar to it and let it sit for a while. Set aside
- Let the cupcakes cool
- Once cooled, cut out a hole in the center of the cupcakes
- Put some apple in the holes
As you know, Frankenstein is alive. To give my little Frankensteins a heart, I decided to put some apple pieces inside them.

Frosting
- Whip the cream
- Add the mascarpone and the icing sugar
- Add the green food colouring
- Mix until completely combined
- Put the piping tip in the piping bag and fill it with the frosting
- Pipe 3 levels on the cupcakes
- Use a knife or spatula to make the frosting flat on the top and straight on the sides (see pictures)
- Sprinkle some chocolate strands on top of the frosting
- Melt the white chocolate, put it in the 2nd piping bag and snip the end off
- Pipe small rounds and place a brown m&m in the middle
- Put it in the freezer to speed things up
- Put the eyes on the frosting
- Use 1 chocolate strand for the mouths

Aren’t they adorable? I must admit it is a little bit creepy to see them standing there, looking at you. Especially if you put them in the fridge, forget they’re in there and then open the fridge to get something. Aaarghh!!
